Punjabi Samosa is the dish which hails from the state of Punjab from Northern India. It is extremely popular in various flavours and made all across India. This Punjabi recipe is also famous all over the world. Punjabi samosa is classified as snack and taken as fast food with tea or coffee. Punjabi samosa recipe takes 30 minutes for preparation. This hot and spicy snack goes well with sweet and sour chutney. It contains more fat and thus not so good for health.
Ingredients to make Punjabi Samosa
For the Filling
Oil- 5 tbsps ginger & garlic paste- 1 tbsp Boiled peas- 1 cup Boiled potatoes- 3 coriander powder- 1 tbsp jeera powder- 1 tbsp mustard seeds- 1 tbsp turmeric- 1/2 tbsp fennel seeds- 1/2 tbsp salt to taste
For the Crust
Maida (all purpose flour)- 2 1/2 cups oil - 1/2 cup Ajwain- 1/2 tbsp salt to taste oil to deep fry
Procedure to cook Punjabi Samosa
Take Maida mix salt, ajwain and warm oil to their and make a dough. Dampen the dough on certain intervals to keep it soft. Knead it well and keep it aside in a bowl. Cover it by a damp muslin cloth to keep the moisture intact,
Mash the boiled potatoes with salt and bit of oil. Heat the oil in a pan. Add the mustard seeds, on spluttering add the peas (Other vegetables like carrots can also be added). After few minutes, add the ginger garlic paste and turmeric on the oil. Add the mashed potatoes and fry the mixture well for 10 minutes. Add the coriander at the very end.
Making the Samosa:
Cut the dough into big balls. Roll the each ball into a flat base. Add the filling on the base. Seal the filling in the base by closing the ends of the base. Use water to do the same. After all the samosas is prepared. Fry them in low flame till they get golden brown. Strain the oil and put them on paper cloth so that the oil is soaked out. Serve the samosas hot.
Punjabi samosa is a delicious dish. It goes well with green mint chutney or Tamarind sweet chutney or Tomato sauce.
