Ingredients to make Green Tomato Pickle
green tomatoes- 6 cups
pickling salt- 3/4 cup
celery seed- 1 tbsp
whole allspice- 1 tbsp
mustard seed- 1 tbsp
whole cloves- 1 tbsp
dry mustard- 1 tbsp
green peppers- 2
vinegar- 3 cups
brown sugar- 2 1/2 cups
Procedure to cook Green Tomato Pickle
Peel and slice onions in thin rings. Sprinkle salt over alternate layers of sliced tomatoes & onions in a non-reactive dish. Let stand in a cool place overnight.
Place tomatoes and onions in a cheesecloth bag, and squeeze gently to remove excess juice. Combine the mixture with sugar, vinegar, chile peppers, mustard seeds, celery seeds, and pepper in a large kettle. Tie allspice and cloves in a small cheesecloth bag. Add the spice bag and the mixture into the kettle. Bring to a boil. Cook for 30 minutes after mixture returns to a boil. Then remove the spice bag. Pour the pickle into jars with some of the boiling liquid. Leave the pickle for two weeks before staring to use it.
